Yeah I know. They can be invasive. I’ll be careful with them and make sure they don’t get outta control. I wanted to try them and actually I should have actually tried them before deciding to grow them. But if none of us like them, I think they’ll be an attractive feature of the garden at least.<\/p>\n
Sunchokes, aka Jerusalem artichokes (Helianthus tuberosus<\/i>), is a species of Sunflower that is native to North America. It’s grown for the edible root.<\/p>\n
They can be prepared<\/a> in many different ways. As I said, I have yet to try them so I can’t make any recommendation. I read they can make you very gassy.<\/p>\n Have I mentioned that a new generation of woodchucks has arrived? Well, they have kept the sunchokes mowed to the ground as I still haven’t completed the fence fortification.<\/p>\n Now I’m hoping they have established themselves enough to make a comeback, or all this typing will be about something I don’t have. Haha. Really, there seems to be green stubs where they used to be so I think at least some will come back.<\/p>\n So I have no photos of it growing but I did find a video clip. BTW I dug this bed with my “hori hori” knife<\/strong><\/a>.<\/p>\n Update: I guess I’ll try it again this year maybe. They got wiped out. \ud83d\ude41<\/p>\n
